Lentil and Deglet Noor Date Puree Patties (with Deglet Noor Date Puree)

Product used: Deglet Noor Date Puree (available in conventional and organic)
Ingredients (serves 4):
- 200 g red lentils
- 2 tbsp Deglet Noor date puree (conventional or organic)
- 1 chopped onion
- 1 grated carrot
- 1 tsp ground cumin
- 1 egg
- 2 tbsp chickpea flour (or other flour)
- Salt and pepper
- Olive oil for cooking
Instructions:
- Cook lentils in boiling water for 15 minutes. Drain well.
- Sauté onion and carrot in olive oil for 5 minutes.
- In a bowl, mix cooked lentils, sautéed vegetables, cumin, date puree, egg, and flour. Season with salt and pepper.
- Shape into small patties.
- Cook patties in a skillet with olive oil for 3–4 minutes on each side until golden.
- Serve warm with yogurt sauce or a fresh salad.
