Lentil and Deglet Noor Date Puree Patties

Product used: Deglet Noor Date Puree (available in conventional and organic)

Ingredients (serves 4):

  • 200 g red lentils
  • 2 tbsp Deglet Noor date puree (conventional or organic)
  • 1 chopped onion
  • 1 grated carrot
  • 1 tsp ground cumin
  • 1 egg
  • 2 tbsp chickpea flour (or other flour)
  • Salt and pepper
  • Olive oil for cooking

Instructions:

  1. Cook lentils in boiling water for 15 minutes. Drain well.
  2. Sauté onion and carrot in olive oil for 5 minutes.
  3. In a bowl, mix cooked lentils, sautéed vegetables, cumin, date puree, egg, and flour. Season with salt and pepper.
  4. Shape into small patties.
  5. Cook patties in a skillet with olive oil for 3–4 minutes on each side until golden.
  6. Serve warm with yogurt sauce or a fresh salad.
